Every Tuesday, I look forward to picking up my CSA box from Morningside Farms in Brevard. The produce is local, fresh and tasty and it encourages me to be creative. This week it made me think of borscht because of the beets and cabbage, but I got a little non-traditional with it–but that is the fun part! Here is what I started with:
I sauteed onions and local chorizo sausage first, and then added those lovely Roma tomatoes to make a sauce. Then put it all in the slow cooker. The aroma in the kitchen was divine!
Those aren’t potatoes-they are golden beets, somehow, to me they seem sweeter. You can really tell local real tomatoes when you make a sauce–I can’t wait to eat this.
It’s not a very traditional borscht, but it sure tastes good! I love the spicy chorizo. You can find Morningside Farm at http://morningsidefarm.net/
